Pumpkin French Toast Casserole
One loaf of Italian bread
One can of pumpkin
Two & a half cups of milk
Nine eggs
2 tablespoons of pumpkin pie spice
1 teaspoon of vanilla
Three-quarters to one cup of brown sugar
Dice Italian bread into cubes
Layer into greased 9x13 casserole dish
Whisk pumpkin, milk, eggs, pumpkin pie spice, & vanilla together in a bowl
Pour over bread
Cover with foil & refrigerate overnight
Pre-heat oven to 350 degrees
Remove foil
Sprinkle the top of the casserole with brown sugar
Bake for 40 to 45 minutes or until the casserole has the consistency of bread pudding
Serve with maple syrup if desired
Now, I always have to "tweak" recipes....this is what I did.
I used more pumpkin pie spice...probably another tablespoon.
And, I mixed about a quarter cup of brown sugar into the pumpkin mix.
I am thinking next time I may make a cream cheese glaze to drizzle over. Yumm.
A friend passed this recipe onto me years ago...it sat in my "you gotta make this" file for way too long. This is delicious & so easy. Definitely will be a "go-to" dish.
