Green Chili Stew


Green Chili Stew

I was asked to post this recipe via IG.  Unfortunately, I hadn't planned to post it.  So, you only get the BEFORE pic.  However, it was YUMMY!  Of course, it was...it's a Better Homes & Gardens recipe from October 1998 (Yeah, I have recipes in a file that I have been waiting to cook since 1998.  Sue me.)

Shopping List:

 2 lbs of beef stew meat
1/4 cup of all purpose flour
1/4 cup of butter
6 cloves of garlic
3 cups of beef broth
1 12oz bottle of dark (Mexican) beer
1 cup mild or medium green salsa
2 tsp of oregano
1 tsp of cumin
3 medium potatoes, cubed (about 3 cups)
1 14oz can of hominy (drained)
2 4oz cans of green chilies
12 green onions (I also added a medium onion chunked)
1/2 cup of snipped cilantro

Toss beef cubes with flour.  Brown the beef cubes in melted butter.  Remove.  Add garlic to pan & cook 1 minute.  In a slow cooker, add meat, garlic, broth, salsa, oregano, cumin, potatoes, and onion.  Cook on low for 8 hours.  Add, hominy, green chilies, cilantro, and green onions.  Heat through.  (about 30 minutes on HIGH)

I served mine with Green Chilie Cheddar Corn Bread.  

Perfect winter meal.
