Southwest Turkey Meatloaf



For those of you who said you were interested in the recipe on IG....here ya go!

3 lbs of ground turkey
2 eggs
2 cups crushed tortilla chips (you may need more depending on the consistency)
1 bag of the frozen SW corn mix (corn, black beans, red peppers & onions)
1bottle of salsa (split...1/2 in the meatloaf & 1/2 on top)
3 tbsp of taco seasoning (or 1 packet)
2 tbsp of dried minced onion
1tbsp of minced garlic
Dash of salt & pepper

Toppings:
Shredded Cheese
Lettuce 
Tomatos
Jalapenos
Green Onions
Black Olives
Salsa

Throw all the ingredients together in a bowl.  I use my hands to combine it all.

Once it is mixed, transfer to a 9x13 baking pan (greased) and mold into meatloaf form OR you could make little individual ones.  Top with remaining salsa & cook in a 350 degree oven for about 1 1/2 hours (if a large meatloaf...less for the individual ones).  I may have cooked mine a bit longer.

Let sit for 10 minutes & slice.  Serve with toppings.

I adapted this recipe from BH&G...eliminating the rice & cheese to cut down on calories. Also, because I was in a hurry...I just used dried onion.  You could saute an onion if you like.  However, you could add them to your meatloaf & cut down on the tortilla chips.

Not a bad low-calorie....low-fat meal!
